The Paso Robles CAB Collective is a grass-root, non-profit organization that was created because the Bordeaux varieties Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot, and Malbec that are grown in the Paso Robles appellation are under-represented in the wine industry. The organization’s vision, therefore, is to promote the full potential of the Paso Robles appellation by raising awareness about the unique qualities of Paso Robles Cabernet and red Bordeaux varietals through events and educational initiatives.
Invited guests will arrive on Tuesday, April 11th and will be greeted with a welcome luncheon at the Allegretto Vineyard Resort. After the luncheon, there will be a series of educational discussions:
· Panel 1: an introduction to the Paso Robles AVA.
· Panel 2: a discussion on Cabernet Sauvignon led by Fred Dame, master sommelier and vice president of Prestige Accounts at American Wine & Spirits.
· Panel 3: a tasting and discussion of Bordeaux varieties where you and your table will create your ultimate Cabernet blend, which will then be judged by Fred Dame.
During the evening you will be hosted to delicious winemaker dinners around town.
On the morning of April 12th, you will visit various member wineries touring facilities, where you will taste top shelf wines. In the afternoon, you will return to the beautiful Allegretto Resort for an engaging panel discussion on Malbec. Following the Malbec panel, PRCC member wineries will join for a grand tasting of the En Primeur and current vintage. You are also invited to enjoy the sunset from a zip line over the vineyards. The evening will end with a deliciously prepared barbecue featuring member wineries.
The final day of the Paso Robles CAB Collective will consist of morning winery visits. The event will conclude with a celebratory lunch reception, where guests will walk away with a deeper appreciation for Paso Robles wines.pasting
